COOKED BEANS WITH RICE 
1 lb. black dried beans (or reg. beans)
1 1/2 c. chopped onion
2 garlic cloves, crushed
2 tbsp. honey
1 chopped green pepper
1 ham hock, smoked

Cover the washed beans in a pot with water. Bring to a boil for 2 minutes, turn off fire, cover beans and let stand for 1 hour. Drain beans, return to pot and add 4 cups water. Bring to a boil and boil 5 minutes.

Add 4 cups water, onion, garlic, honey, green pepper, ham hock and simmer stirring occasionally for 5 hours. Simmer uncovered another hour. Serve over cooled rice and onion.
