GOURMET CASSEROLE 
1 lb. fresh sausage
1 med. onion chopped
1 med. green pepper chipped
1/2 c. celery chopped
1 c. uncooked rice
1 (2 oz.) can pimentos
1 c. grated American cheese
1 can cream of chicken soup
1 can cream of mushroom soup

Brown sausage stirring it all the time in large skillet over medium heat. Add onion, pepper, celery, continue cooking until vegetables are limp. Drain off fat. Add rice, uncooked and pimentos and pimientos and soup and 1/2 cup cheese. Sprinkle remaining cheese over top. Bake 350 degrees for 1 1/2 hours.
