COOL STRAWBERRY CHIFFON 
1 1/2 c. fresh or frozen strawberries, thawed
1 env. unflavored gelatin
1/2 c. cold water
1/2 c. orange juice
2 tbsp. sugar
1 tbsp. rum
1 tsp. vanilla extract
2 egg whites

Puree strawberries in food processor; set aside. In a small saucepan, sprinkle gelatin over cold water, set aside until gelatin softens; about 5 minutes. Dissolve gelatin over low heat approximately 5 minutes, stirring constantly; pour into a large bowl. Cool 5 minutes; beat in orange juice, sugar, rum, vanilla extract and strawberries. Cover and refrigerate 1 hour.

In a medium bowl, beat eggs at high speed until stiff peaks form. Gently fold into gelatin mixture; spoon into parfait glasses. Serves 4.
