ROSE PETAL JELLY
3 c. rose petals, packed down
3 c. water
3 c. sugar
1 tbsp. lemon juice
1 box powdered pectin
Paraffin wax

(Best petals are from Hansen bush but you can use any however - make sure they are free from dirt and insects).

Bring water to a boil - remove from heat. Add rose petals. Cover and steep for 30-60 minutes. Pour through sieve, discard rose petals, keeping juice.

Make sure you have 3 cups juice if not add water to make 3. Place in pot then add pectin. Stir until dissolved, then bring to hard boil. Add sugar and lemon juice, stir and bring to hard boil again for 1-2 minutes. Skim off foam and pour into jelly jars, sterilized. Seal with paraffin wax.

Thanks so much for putting this recipe up. Wish I still had my huge rose garden.

I've made four or five batches with this recipe. It's easy and the sweetness is just right. I've also added mandrian orange blossoms which was nice but a bit too floral for me. The color is beautiful and they make the greatest gifts! Thank you!

I have grown roses my whole life and love them. I found this and can not even imagine how to thank you. It is the perfect combination! The jelly set perfectly. My family loves the taste. Filled my entire house with the smell of fresh roses as I cooked down the petals. THANK YOU!!!
