APPLE RAISIN NUT BREAD 
2 eggs
1/2 c. vegetable oil
1 1/2 c. all-purpose flour
3/4 c. sugar
1 1/2 tsp. ground cinnamon
1 tsp. baking soda
1 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
1 c. chopped walnuts
1 c. raisins
1 c. shredded fresh apples (2 med. apples)

1. Combine eggs, oil, flour, sugar, cinnamon, baking soda, vanilla, salt and baking powder in large mixing bowl. Stir until well blended.

2. Stir in nuts, raisins and apples until a rather stiff batter is formed. Mix until all ingredients are thoroughly blended, but do not overmix.

3. Pour into a greased 8 1/2 x 4 1/2 inch loaf pan.

4. Bake at 375 degrees for 1 hour or until a tester inserted in the center comes out clean.

Note: You may want to adjust the spices to suit your tastes.
