COOKIE CRUST WITH FRUIT 
1 c. sifted flour
1 tsp. baking powder
1/4 tsp. salt
2 tbsp. sugar
1-1/2 to 3 tbsp. butter
1 egg
1/2 tsp. vanilla
Milk

Combine the flour, baking powder, salt, and sugar. Cut in butter until crumbly.

Beat egg with vanilla; add enough milk to make 1/2 cup mixture.

Combine the two mixtures to make a stiff dough. Pat into a greased 9 inch x 9 inch x 2 inch pan with a floured palm. (This recipe can be doubled and baked in 9 inch x 13 inch x 2 inch pan.)

FILLING:

3-4 c. sliced apples, peaches, or plums
1 c. sugar
2 tsp. cinnamon
3 tbsp. melted butter

Slice fruit onto crust in pan. Sprinkle with sugar, cinnamon and butter. Bake about 25 minutes at 425 degrees F.
