LION'S HEAD 
1 lb. uncooked lean pork (ground)
8 mushrooms, chopped fine
12 water chestnuts, chopped fine
1 c. onions, chopped
1 tbsp. fresh ginger, chopped fine
1 egg, beaten
1 tsp. sherry
4 tbsp. soy sauce
2 tsp. sugar
2 tsp. cornstarch
1 tbsp. oil
1 head of cabbage or Chinese cabbage

Shape into 3 large balls or several small ones. Fry balls until brown; drain. Arrange 1 head cabbage or 1 head Chinese cabbage, sliced, in a kettle and place meat balls on it. Add 1/2 cup hot water; simmer 1/2 hour. Serves 6-8.
