CARROT CAKE 
2 jars jr. baby food carrots
2 c. flour
1 1/2 c. oil
2 c. sugar
2 tsp. baking soda
3 tsp. cinnamon
4 eggs
1/2 tsp. salt
1 tsp. vanilla

FROSTING:

1 stick butter
2 oz. cream cheese
1/2 box 10x sugar
Nuts, if desired

Mix all ingredients together and bake in 350 degree oven for 1 hour. Can use cake round pans or make into sheet cake. Ice with cream cheese frosting when cool.

ICING: Use room temperature butter and cream cheese. Mix with sugar and add nuts and spread on cake when cooled.
