LEMON YOGURT MUFFINS 
1 (8 oz.) carton lemon yogurt
1/3 c. melted butter
2 c. buttermilk baking mix
1/4 c. sugar
1 egg, beaten
1/2 tsp. baking soda

Combine all ingredients. Blend well, but don't over stir. Turn into 12 cups greased muffin tin. Bake at 400 degrees for 15 minutes.
