BANANA WALNUT BREAD | |
3 ripe bananas 1/2 c. walnuts 1/2 c. sugar 1 tsp. salt 2 eggs 1 1/2 c. flour 1 1/4 tsp. baking soda 1/4 c. melted butter Preheat the oven to 350 degrees. Using a food processor fitted with the steel blade. Combine the bananas and the walnuts. Processing until the bananas are mashed and the walnuts are chopped. With the motor still running. Add the sugar, salt, and the eggs through the feed tube, mixing well. Combine the flour with the baking soda and add it to the banana mixture (in 3 parts) alternately with the melted butter (in 2 parts) processing well after each addition. Pour the batter into a greased 8 inch tube pan, a Kugelhof mold or a 9 x 5 x 3 inch loaf pan, and bake for about 40-45 minutes, or until nicely browned on top. Cool the cake in its pan on a wire rack for 30 minutes; then invert the cake onto a serving plate and dust with confectioners sugar, if desired. |
