CHICKEN ROLL-UPS 
2 med. tomatoes, peeled
4 c. tomato juice
1 green pepper
1 med. onion
1 clove garlic
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
4-6 chicken breasts
1 c. Mozzarella cheese

Boil tomatoes about 1 minute. Rinse until cool and peel. Chop tomatoes, green pepper and onion. Place in pot. Add juice and spices. Cook over medium high boil and stir often for 1/2 hour. Grate cheese; set aside.

Pound flat the deboned and skinless chicken breasts. Pour small amount of sauce into baking dish. Preheat oven to 350. Pour 1 - 2 tablespoons sauce onto flat chicken breast and sprinkle small amount cheese on top. Roll chicken up and place in pan.

Pour small amount sauce over chicken. Bake 30 minutes. Then sprinkle remaining cheese over chicken. Heat until melted. Serve with rice or potatoes with sauce.
