TURKEY DIVAN | |
2 tbsp. butter 2 tbsp. flour 1 1/4 c. milk 1 egg yolk, slightly beaten 1/4 tsp. dry mustard 1/4 tsp. salt Generous dash pepper 1/4 c. grated Cheddar cheese 2 (10 oz.) pkg. frozen broccoli, cooked & drained 6 servings (about 3 oz. each) Sliced turkey, cooked 2 tbsp. grated Parmesan cheese Melt butter, add flour and cook, stirring until mixture bubbles. Remove from heat. Gradually blend in milk and egg yolk. Add spices, cook, stirring until mixture is thickened and starts to boil. Add Cheddar cheese and cook, stirring until cheese is melted. Arrange hot broccoli and turkey in 12 x 8 inch pan, spooning sauce between layers and on top. Sprinkle with Parmesan cheese. Broil about 4 inches from heat until cheese is browned. Makes 6 servings. |
