STUFFED CHICKEN BREASTS 
4 chicken breasts
1/2 - 3/4 lb. ricotta cheese
1/2 lb. spinach leaves, chopped
6 oz. broccoli flowerettes, chopped
Salt & pepper
Pinch thyme & tarragon
4 tbsp. butter

Cook spinach and broccoli. Melt butter, place in baking dish. Mix ricotta, spinach, broccoli, salt, pepper, thyme and tarragon. Stuff breasts with mixture. Bake at 350 degrees for 1 hour.
