CHRISTMAS SUET (PLUM) PUDDING 
2/3 c. suet, ground fine
1/2 c. sugar
1 tsp. cinnamon
1/2 tsp. nutmeg
1 c. molasses, dark
1 tsp. baking soda
1 tsp. salt
1 tsp. vanilla
1 c. sweet milk
1 c. raisins
3 c. flour

Stir together and place in a ring pan. Steam, covered, over a pan of boiling water for 3 hours until firm. Best served hot (or reheated) with Lemon Sauce.

LEMON SAUCE:

1 c. sugar
4 c. water
2 tbsp. cornstarch
Pinch of salt
Juice and rind of 1 lemon, grated
1 tbsp. butter
