BAKED SQUASH 
3 c. squash, cooked
1/2 c. onion, diced
1 (8 oz.) pkg. Pepperidge Farm corn bread stuffing mix
1 c. scalded milk
1 sm. carton sour cream
3/4 c. carrots, grated
1 stick butter
1 can undiluted cream of chicken soup
1 c. Cheddar cheese, shredded

Saute carrots and onion in butter. Combine with all other ingredients. Put in greased dish and bake 45 minutes at 350 degrees.
