PINEAPPLE NUT COOKIES 
1 lb. butter
2 eggs
4 c. flour
1/2 c. sugar
1/2 pt. sour cream
1 (8 oz.) jar pineapple preserves
1 c. chopped walnuts
1 c. shredded coconut
Pinch of salt

Mix butter and eggs together. Blend in sugar and sour cream. Add flour and salt and mix well. Roll dough out on floured board. Spread pineapple preserves over dough. Top with coconut and walnuts.

Cut dough into 2 inch squares and roll in a log form. Bake on ungreased cookie sheet for 25 minutes in 350 degree oven.
