STEAMED RICE 
1 c. white long grain rice
1 3/4 c. water
1 tbsp. olive oil or butter
1 tsp. salt

Use 1 1/2 quart pot with good fitting lid. Put rice in pot and rinse it well to wash off some of the starch. Drain. Put 1 3/4 cups water in pot with rice, add salt and oil. Bring to a boil, barely. Stir well and immediately turn burner to lowest heat and cover. Do not open pot again even if it simmers over a little. Cook at lowest heat for 25 minutes. Turn off heat and let sit for 5 minutes. Serve.
