LOBSTER THERMIDOR 
2 boiled lobsters
1 1/2 tbsp. butter
1 1/2 tbsp. flour
1 c. cream
1 egg yolk
1 tsp. dry mustard
1 tsp. salt
Dash of cayenne pepper
2 tbsp. dry sherry
1/2 lb. mushrooms
Grated Parmesan cheese

Remove lobster meat from shells and cut into small pieces. Melt the butter, stir in flour smoothly, add cream and stir constantly until thickened. Beat egg yolk into a little of the sauce and add to the whole, beating in rapidly. Add mustard, salt, cayenne, and sherry. Peel and slice mushrooms and saute in a little butter 5 minutes.

Add with lobster meat, to the sauce and allow to heat through over low heat. Fill shells with mixture, sprinkle lightly with Parmesan, dot sparingly with butter, and run under the broiler to brown, 3 to 5 minutes. Makes 4 servings.
