MEXICALI MEATLOAF 
2 lbs. ground beef
1 can picante sauce
Salt and pepper to taste
1 c. bread crumbs (or crackers)
1/2 lb. Monterey Jack cheese, sliced
1 (4 oz.) can mild green chilies, sliced
1 (4 oz.) can mild green chilies, sliced

Mix ground beef, sauce, salt, pepper, bread crumbs, and eggs in large bowl. Spread 1/2 of the mixture in a loaf pan. Spread cheese and chilies over meat mixture and top with remaining meat mixture. Bake at 350 degrees for 1 1/2 - 2 hours. Makes 6-8 servings.
