BOILED CHITTERLINGS 
2 lb. chitterlings, cleaned and cut into 2-inch lengths
2 onions, minced
2 bay leaves
2 sprigs fresh thyme or a pinch of ground thyme
1/2 tsp. cayenne
2 cloves garlic, minced
2 tsp. salt
1/4 tsp. pepper

Put all ingredients and 4 cups water in kettle. Bring to boil and then simmer, covered, 2 hours or until tender. Serve plain or deep-fry.
