BASIL PESTO WITH ANGEL HAIR
PESTO
 
1 pkg. (about 1 c.) fresh basil
3 tbsp. toasted pine nuts or walnuts
2 cloves garlic
1/4 c. olive oil
1/4 c. Parmesan
1/2 lb. angel hair pasta
1 tomato, chopped and seeded

In blender combine basil (leaves only), nuts, garlic. Add oil in a stream. Blend until pretty smooth. Stir in Parmesan. Serve with cooked hot pasta adding tomato pieces on top. Serves 2-3.
