YOGURT SCONES 
2 c. flour
Sugar
1/2 tsp. salt
1 tbsp. baking powder
1/2 c. vegetable shortening
1 egg, beaten
1/2 c. yogurt (apple or peach-flavored)
2 tbsp. melted butter

Sift together flour, 1/4 cup sugar, salt and baking powder. Cut in shortening. Mix together the egg, yogurt, and melted butter. Add egg mixture to flour mixture. Stir just until blended.

Turn dough out onto floured cloth and knead very gently 8 to 10 strokes. Pat into 8-inch circle and cut in 8 wedges. Sprinkle each wedge with sugar. Bake 10 to 12 minutes at 425 degrees on ungreased cookie sheet.
