GRITS SOUFFLE 
4 c. cooked grits
3 eggs
1 stick butter
1 c. sour cream
2 c. grated sharp cheese (reserve 1 cup)

Mix all ingredients well. Pour in greased casserole sprinkle with reserved cup of cheese. Bake at 375 degrees until knife inserted in center comes out clean. Approximately 1 hour.
