HONEY-GLAZED MEATLOAF 
2 lbs. ground beef, pork, veal combo
1 sm. onion, minced
4 tbsp. minced parsley (fresh)
1 lg. carrot, grated
Salt & pepper to taste
2 eggs, beaten
3 hard boiled eggs, shelled
Honey Glaze (below)

Combine meat, onion, garlic, parsley, basil, carrot, salt, pepper and beaten eggs in medium bowl.

Place half the meat in oblong pan or baking dish. Make a shallow indentation in center lengthwise. End to end, place hard-boiled eggs in indentation. Cover with remaining meat and shape into oval loaf.

Bake at 350 degrees for 45 minutes. Top with Honey Glaze and bake additional 15 minutes.

HONEY GLAZE:

2 tbsp. butter, melted
1/4 tsp. fresh lemon juice
1/2 c. honey

Combine in small saucepan and heat until bubbly.
