FLANNEL CAKES - PANCAKES 
2 eggs
Pinch of salt
Buttermilk
2-3 c. flour
1 tsp. baking powder
1 1/2 tsp. baking soda

Separate 2 eggs. Put yolks in bowl, stir with a pinch of salt. Add enough buttermilk to make a smooth mixture. Proceed to add alternately flour and buttermilk, stirring to keep it smooth with no lumps. (You can thin batter using more buttermilk, thicken with flour, or increase quantity of batter using both ingredients.) Add teaspoonful baking powder and stir well.

Beat white of eggs in separate bowl and fold into batter. Add 1-1 1/2 teaspoonfuls baking soda. Stir gently until mixed up. Batter will start to raise and do not stir any more. Bake on preheated griddle. Makes about 12 pancakes.
