OLD TIME BEEF STEW | |
2 lbs. beef chuck, cut in 1 1/2 inch cubes 2 tbsp. olive oil 1 or 2 bay leaves 1 tsp. sugar 1/4 tsp. pepper 1 med. onion, sliced 1 tbsp. salt 1/2 tsp. paprika Dash of ground allspice Thoroughly brown the meat in the olive oil. Add 2 cups of hot water and the remaining 7 ingredients. Cover and simmer for 1 1/2 hours, turning often. Remove the bay leaves. Add the following vegetables: 2 parsnips, sliced About 3 slices of turnip, about 1/2 inch thick, diced 4 potatoes, cut up 1 lb. small white onions Cover and cook for 30 to 45 minutes, or until vegetables are tender. Thicken with flour and water to the desired consistency. Start with 2 tablespoons flour mixed with half a cup of water. When the desired consistency is reached, add 2/3 of a teaspoon of gravy browner. |
