SCALLOPED EGGPLANT 
1 med. eggplant
6 tbsp. butter
3-inch chopped onion
1 tsp. salt
1/4 tsp. pepper
3 c. soft bread crumbs
1/2 tsp. poultry season
1 tbsp. lemon juice
2 tbsp. parsley

Peel and cube eggplant. Cook in double boiler 30 minutes or until soft. Melt butter in pan and cook onion until tender. Mix together and bake 15 minutes or until brown in moderate oven.
