BLACK BEAN SALAD 
2 (15 oz.) cans black beans, drained & rinsed
1 c. chopped tomato
3/4 c. chopped sweet red peppers
2/3 c. sliced green onions
1/2 c. chopped celery
1 tbsp. lemon rind
1/2 clove garlic, minced
2 tbsp. chopped cilantro leaves (opt.)
1 (0.7 oz.) env. Italian salad dressing mix
3/4 c. water
1/4 tsp. red pepper
2 tbsp. olive oil

Combine beans, tomato, sweet red pepper, green onion, celery, lemon rind, minced garlic and cilantro leaves (if desired) and set aside. Combine remaining ingredients in a jar. Cover tightly and shake vigorously. Pour dressing over salad and toss gently. Cover and chill. Toss gently before serving. Serves 8.
