ZUCCHINI BREAD 
3 eggs
2 c. sugar
2 c. raw, shredded zucchini
1 tsp. baking soda
1/4 tsp. baking powder
1/2 c. nuts
1 c. salad oil
3 c. flour
1 tsp. salt
3 tsp. cinnamon
3 tsp. vanilla
1/2 c. raisins

Cream eggs, sugar, and oil. Add dry ingredients alternately with zucchini. Add vanilla, raisins, and nuts. Pour batter into greased bread pans. Bake at 350 degrees for 1 hour. Makes two or three loaves depending on pan size.
