ALBONDIGAS (MEAT BALLS) 
2 c. ground chuck
1/4 c. finely chopped onions
2 tsp. minced garlic
1 egg
2 tbsp. flour
1 tsp. oregano
1/4 tsp. cumin
1/4 tsp. salt
Flour for coating
Pure Spanish oil

Combine all ingredients (except flour) to form into 9 meatballs and coat them with the flour. In a deep skillet, brown the meat balls in a small amount of heated cooking oil.

Prepare tomato sauce and add it to the meat balls. Reduce sauce until it is the consistency of light gravy. Serve with white rice. Serves 3.
