BREAKFAST APPLE PANCAKE 
3/4 c. Aunt Jemima buttermilk complete pancake mix
1/2 c. water
3 eggs
1/3 c. sugar
1/4 c. butter
1/4 c. chopped pecans or walnuts
1 tsp. cinnamon

Heat oven to 450 degrees. Combine pancake mix, water, eggs, and 1 teaspoon sugar; mix well. In 10 inch oven proof skillet, saute apple slices in butter on medium high heat until tender. Remove from heat. Sprinkle nuts over apples. Pour batter evenly over apples. Combine remaining sugar and cinnamon; sprinkle over batter. Cover skillet. Bake 12-14 minutes or until puffed and sugar is melted. Loosen sides, cool slightly and cut into wedges. Makes 4-6 servings.
