OKRA PATTIES 
2 1/4 c. cut okra
1 beaten egg
1 tsp. salt
1/3 c. flour
Black pepper

Cut okra in 1/4 inch rounds. Place in double boiler with 1/2 teaspoon salt and steam until about half tender. Beat egg. Add 1/2 teaspoon salt, pepper, and flour; blend well. Add the steamed okra. Mix well and shape into small patties. Brown on both sides in shallow fat.

When I make this I don't bother steaming first - I just chop up real well. I also add a little onion and red pepper for a little more kick. Then just shape them up and brown! Love this rendition instead of the old frying the individual rounds.
