PEAS IN CREAM 
3 tbsp. butter
1/2 c. water
2 lbs. peas about 2 c. shelled
1/2 tsp. salt
1 egg yolk
1/4 c. cream
1 tsp. sugar

Heat butter and water to boiling point. Add shelled peas and salt. Cover and boil rapidly until tender. To slightly beaten egg yolk add cream and sugar, beat thoroughly. Add to peas and heat slowly. Makes 4 to 6 servings.
