MASHED POTATO CANDY 
3/4 c. mashed potatoes
1 lb. (4 c.) coconut
1 lb. (4 3/4 c.) confectioners sugar
1 tsp. almond extract
Chocolate almond bark

Melt chocolate almond bark. Set aside. Combine rest of ingredients. Roll into balls. Chill for 1/2 to 1 hour. Coat with the melted almond bark. Let set to harden, then freeze.
