SOFT ZUCCHINI COOKIES 
1/2 c. shortening
1/2 c. sugar
1 c. brown sugar
2 eggs (beat until fluffy)
1 tsp. vanilla
3 c. grated zucchini
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
3 1/2 c. flour
1 c. nuts
1 c. chopped dates

Measure flour. Sift and spoon level cups. Cream and mix ingredients in order listed. If zucchini is real moist, add 1/2 cup more flour. Drop and bake on greased cookie sheet at 375 degrees for 12 to 15 minutes.

If you would rather, add 2 cups rolled oats in place of flour--add raisins and chocolate chips.

This makes 5 dozen cookies. You can make 2 1/2 dozen then add 3 tablespoons cocoa to remaining batter and make the rest chocolate.
