COOKIE TARTS 
1 c. sugar
1 c. butter, soft
2 eggs
1 1/2 tsp. vanilla
3 c. flour
1 tsp. salt
1/2 tsp. baking soda

Mix sugar, butter, eggs, and vanilla. Stir in remaining ingredients. Divide dough into 3 equal parts. Shape each part into roll, about 1 1/2 inches in diameter. Wrap and refrigerate 4 hours. Cut rolls into 1/8 inch slices, cut out center of half of the unbaked cookie slices with 3/4 inch cutters, or design your own patterns. Spoon 1/2 teaspoon red jelly or jam onto uncut slices. Press edges to seal. Heat oven to 400 degrees. Place about 1 inch apart on ungreased cookie sheet. Bake 8-10 minutes. Immediately remove from cookie sheet.
