STUFFED PEPPERS 
1 lg. pepper (1 c.)
4 oz. uncooked ground turkey seasoned to taste
1 can tomato sauce
1 c. cooked brown rice

Remove top from pepper, core and seed. After mixing turkey with seasonings, place the meat in the pepper shell. Place in saucepan, cover with tomato sauce and cook until pepper is tender. Remove from sauce, serve with rice and salad. Single serving = 4 ounces protein, 1 cup vegetable, 1 cup starch, 1 cup salad.
