MIXED VEGETABLE SOUFFLE | |
1 pkg. frozen mixed vegetables 2 tbsp. chopped onion 2 tbsp. chopped celery 2 c. thick white sauce (your favorite white sauce) 3 eggs 1/2 c. grated cheddar cheese Salt & pepper (a little) Cook mixed vegetables, onion, celery in salted water until tender. Drain, make white sauce, add cheese and egg yolks, mix until smooth; add vegetables. Beat egg whites until stiff and add to vegetable mixture. Place in greased casserole dish. Bake at 325 to 350 degrees about 35 to 45 minutes or until done. (I use a 2 quart casserole dish and double the recipe for my family.) |
