GLOP 
3 med. potatoes, cubed
1 1/2 bell peppers (1/2 green, 1/2 red and 1/2 yellow)
1 1/2 onions, diced
6 strips bacon, cut into sm. pieces
8 oz. Monterey Jack cheese, grated
8 oz. cheddar cheese (sharp or mild), grated
6 eggs, scrambled
Salt and pepper to taste

Fry bacon in skillet until done. Remove bacon and place potatoes in skillet. Cook until soft. Add bell peppers and onions and cook until done. Add scrambled eggs to skillet and mix. When eggs are almost done, add Monterey Jack cheese, then cheddar cheese. Do not stir in. Allow cheese to melt, then turn off stove. May now cut into pie pieces and serve.
