ZUCCHINI CASSEROLE 
1 lg. zucchini, sliced
2 lg. bell peppers, sliced
3 onions, sliced
1/2 lb. shredded or sliced Mozzarella cheese
1/2 c. olive oil
Garlic powder
Salt and pepper
Oregano
Bread crumbs
Butter

Coat the bottom of a casserole with butter. Add a layer of zucchini, then pepper, then onion. Sprinkle with bread crumbs and seasonings. Top with a layer of cheese. Repeat until all the vegetables are used up, then pour the oil over all. Bake in a preheated 350 degree oven for 45 minutes until the vegetables are cooked and the cheese is browned. Serves 4-6.
