CHICKEN SURPRISE 
4 thin slices boneless ham
4 chicken breasts, boned
4 lg. slices provolone cheese
1 1/2 c. bread crumbs
1/2 c. corn meal
2 eggs, beaten

Pound out chicken breasts until pancake thin. Place in center of each chicken breast 1 slice of ham and 1 slice of cheese. Roll up and secure with toothpicks. Dip each rollup into beaten eggs, then into mixture of bread crumbs and corn meal to coat evenly.

In large skillet, place 1 tablespoon light olive oil. Brown rollups evenly on all sides over medium heat, turning frequently. Reduce heat and simmer until chicken is done (about a half hour). Serve with fresh broccoli spears (or vegetable of choice) and crusty rolls.
