BEANS AND RICE COMBO PLATE 
1 c. spicy black beans (see recipe)
1 c. cooked brown rice
1 oz. low fat cheddar cheese, shredded
2 tbsp. salsa
2 tbsp. nonfat yogurt
1 tbsp. minced sweet red pepper
1 tbsp. minced onion
1 tbsp. shredded lettuce
1 tbsp. minced fresh coriander

Serve the beans and rice topped with the cheddar, salsa, yogurt, red peppers, onions, lettuce and coriander.

Serves 1: Per serving: 510 calories, 7.1 g. fat (12% of calories), 10x2 g dietary fiber, 29.9 g. protein, 14 mg cholesterol, 95mg sodium.
