RAISIN COOKIES 
1 c. packed brown sugar
1/2 c. shortening
1 egg
3 tbsp. water
1 1/2 tsp. vanilla
1 c. all purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1 1/2 c. quick cooking oats
1 3/4 c. chocolate covered raisins

Heat oven to 350 degrees. Beat down sugar, shortening, egg, water and vanilla until light and fluffy. Stir in flour, baking soda, salt, oats, and chocolate covered raisins. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheet. Bake until light brown, about 10 minutes. Makes about 4 dozen cookies.

NOTE: If using self rising flour, omit baking soda and salt.
