PINEAPPLE FRITTERS 
1 egg
1 scant c. of milk
3 tbsp. sugar
2 1/2 tsp. baking powder
1 c. drained, crushed pineapple
2 tbsp. butter, melted
2 1/2 c. flour to make stiff batter

Combine in order given. Add pineapple last. Drop a tablespoon at a time into hot, deep fat, drying until light golden brown.

SAUCE:

1 c. light brown sugar
2 tbsp. flour
Juice of 1/2 lemon
1 c. water
1 c. pineapple juice
2 tbsp. butter

Combine and cook until clear. Dip fritters in sauce.
