BEEF STEW WITH WINE SAUCE 
1 1/2 lb. beef chuck (cut into 1" chunks)
1 tbsp. shortening
1 clove garlic, minced
1 med. onion, chopped
1/2 tsp. salt
1/2 tsp. pepper
1 can tomato soup
1/2 c. water
3/4 c. red wine
1/4 tsp. basil
1/4 tsp. thyme
1/4 c. catsup
3 carrots, cut in 1/2" diagonal pieces
1 1/2 c. celery, 1" pieces
4 med. potatoes, cut in quarters

Brown beef in shortening. Add garlic and onion. Saute until transparent. Sprinkle with salt and pepper. Stir in soup, wine and water. Cover and simmer 30 minutes. Add herbs and ketchup. Arrange vegetables on top of meat. Cover and simmer until tender (about 1 1/2 hours). Add more water if necessary. About 6 servings.
