SOUTHERN SPOON BREAD 
2 c. boiling water
1 tbsp. shortening
1 c. corn meal
1 1/2 c. buttermilk
2 eggs, well beaten
1/2 tsp. salt
1 tsp. baking soda
1 tsp. baking powder

Preheat oven to 350 degrees. Add the shortening and cornmeal to the boiling water.

Add buttermilk, eggs, salt, baking soda, and baking powder and beat well. Grease a 1 quart baking dish and put in hot oven until smoking hot. Pour in batter.

Place on top rack of oven until brown. Continue baking at bottom oven until done, 20 to 30 minutes.

Serve with a spoon; finished product will be crusty on top, but soft inside. Top generously with butter.
