CHOCO - DIPPED PEANUT BUTTER
COOKIES
 
1 (14 oz.) can Eagle brand
1 egg
1 tsp. vanilla
1 lb. chocolate confectioners' coating, melted
3/4 to 1 c. peanut butter
2 c. biscuit baking mix

In large mixer bowl, beat Eagle Brand, peanut butter, egg and vanilla until smooth. Add biscuit mix, mix well. Chill dough at least 1 hour. Shape into 1 inch balls. Place 2 inches apart on ungreased baking sheet. Bake at 350 degrees for 8 to 10 minutes, until lightly browned (do not overbake). Cool. Partially dip cookies into melted chocolate. Place on waxed paper. Let stand until firm. Store tightly covered at room temperature. Makes 5 dozen.
