CHEESE PUFFS 
1 c. milk
1/2 c. butter, cut up
1/2 tsp. salt
1 c. flour
4 lg. eggs
1 c. shredded cheddar cheese
2 tsp. dry sherry or water

Bring milk, butter, salt to boil over medium heat. Add flour all at once and cook, stirring quickly with wooden spoon, 1 to 2 minutes until mixture leaves sides and forms ball. Remove from heat, add eggs one at a time, beat well after each one. Add cheese; and sherry (water). Stir until well blended. Drop by tablespoonful, 2 inches apart on lightly greased (2) cookie sheets. Cook at 350 degrees F. 18 to 20 minutes rotate every 10 minutes, until pastry is puffed and golden brown. Cool 15 minutes on sheets then remove.
