ZUCCHINI COOKIES 
3/4 c. shortening
1 1/2 c. sugar
1 egg
1 tsp. vanilla
1 1/2 c. grated zucchini
2 1/2 c. flour
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1/2 c. chopped nuts
6 oz. chocolate chips

Cream shortening and sugar. Beat in egg and vanilla; stir in zucchini. Stir in dry ingredients. Add nuts and chips. Drop by spoonfuls on greased baking sheet. Bake at 350 degrees for 15 minutes or until lightly browned. Cool on wire rack. Yield: 4 to 5 dozen.
