HUCKLEBERRY PIE | |
Pastry for 9" two crust pie 1/2 c. sugar 1/3 c. flour 1/2 tsp. cinnamon 4 c. fresh huckleberries 1 tbsp. lemon juice 2 tbsp. butter Frozen or canned blueberries may be substituted for the huckleberries. Heat oven to 425 degrees. Prepare pastry. Stir together sugar, flour and cinnamon; mix with berries. Turn into pastry lined pie pan; sprinkle with lemon juice and dot with butter. Cover with top crust which has slits cut in it; seal and flute. Cover edge with 2" to 3" strips of aluminum foil to prevent excessive browning; remove foil last 15 minutes of baking. Bake 35 to 45 minutes or until crust is brown and juice begins to bubble through slits in crust. I have used this Betty Crocker recipe for over 42 years, it hasn't failed once. I've also included the pastry recipe that I use. |
